Destination wedding, what kind of questions should I be asking?

For the reception venue: is catering included? Is tableware included? Is service included? Is cleanup included? If catering isn't included, what do you need from the caterer, and by what date? What specifically do you mean by "service": one waiter for every two tables, or one waiter for the entire room? If we supply our own alcohol, how much do you charge for corkage? Do you charge extra for serving the wedding cake? How much do you charge per extra guest? If you have to cancel our reservation, will we get our deposit back, and when is the latest date we can be cancelled for anything short of Act of God?
